2021 Heathcote Shiraz
Tasting Notes
Medium to deep Ruby. Blackcurrant, fresh leaf tobacco, cherry cola, plum and anise on the nose. Intense cherry and plum on the front palette, fine mouth filling tannin, bright crunchy acid finishing with cassis, cherry cola and oak spice.
Winemaking
Although treated in a similar manner, this wine hailing from our sister vineyards in Colbinabbin (AKA Heathcote) is a stark contrast from those produced from grapes grown here on the Mornington Peninsula. Destemmed to open fermenters, we try our hardest to keep these ferments cool and minimise extraction. After a cool and slow ferment, the wine is pressed to a mix of new and older French oak barriques for slow aging over 18 months, prior to bottling.
