2020 Chardonnay
Tasting Notes
Aromas of white nectarine, starfruit, granny smith, wet chalk, lime blossom, lees, lemon tart, roasted cashew and vanilla. Intense lemon-lime curd, brioche and vanilla on the palate lead to a mineral and chalky acid structure, slight phenolic grip and lingering sweetness of starfruit, lime and melon on a long, long finish.
Winemaking
Chardonnay is considered the winemakers grape, with virtually endless possible winemaking options to create wines in a plethora of styles. We like to have fun and build a wine of complexity. A wine that inexcusably sacrifices overt fruit characters that are easily oxidised with a view of building a wine that has driving acidity, texture, minerality and the ability to last the ages. Whole-bunch pressed straight to barrel for fermentation with indigenous yeasts, aerations, malolactic decarboxylation, lees stirring, new french oak and long aging both in barrel and bottle.
