Tasting Notes
Intense, mineral and concentrated aromas with white nectarine, green pear, lemon tart, vanilla blossom, and a hint of candied ginger. Fresh and mineral on the front palette with intense lime, wet slate, honeysuckle, and stunning acid structure through the middle, morphing into a long maritime finish of nectarine, almond kernel, and oyster shell.
Winemaking
We like to work our Pinot Gris in the winery to build structure, minerality, and age-ability. The grapes are harvested on the riper spectrum but with lots of natural acids. The grapes are hand-harvested and immediately and very delicately the whole bunch pressed to both barriques and stainless steel for a cool to warm ferment. The barrels are topped and stirred every fortnight for 6 months, prior to blending and bottling and further aging in the cellar.
