Tasting Notes

Aromas of ripe, rich peach, melon, butterscotch, vanilla and oak spice. A hint of funk, from long barrel aging and stirring of lees. On the front palate, intense melon and pineapple move into a surprisingly mineral and rich mid-palate with, mineral acid, slightly chalky tannin grip, and a deliciously creamy finish of cashew, honeydew and oak spice.

Winemaking

Chardonnay is considered the winemakers grape, with virtually endless possible winemaking options to create wines in a plethora of styles. We like to be creative and build a wine of complexity. A wine that inexcusably sacrifices overt fruit characters, with a view of creating a wine that has driving acidity, texture, minerality, and the ability to last the ages. Whole-bunch pressed straight to French oak barrels (a tiny percentage new) for fermentation with indigenous yeasts, aerations, malolactic decarboxylation, lees stirring, and a long aging process, both in barrel and bottle.
