Tasting Notes
Aromas of biscuit and ripe, rich peach, melon, butterscotch, vanilla and oak spice. On the front palate, intense lime blossom and stone fruit move into a surprisingly mineral and rich mid-palate with, the perfect mousse and a deliciously clean mineral yet creamy finish of cashew and biscuit.
Winemaking
This very select parcel of not too ripe chardonnay was carefully fermented in stainless tank before finishing malo lactic decarboxylation and then being sent to our friends for secondary bottle fermentation. Now having 7 years on lees this refined sparkling of tiny bubbles is riddled and disgorged in small batches with our current batch dosages at only 4 g/L.
