2022 Rosé (seche)
Tasting Note
A gorgeous pale salmon hue. On the nose complex spiced honeydew melon, and wild strawberry with loads of sweet vanilla and a touch of cola nut. Moving on to the palette an explosion of vanilla bean, melon & stunning mineral acid with a long dry finish of smokey wild strawberry, melon and spice.
Winemaking
Rosé is a delight and a challenge that we savour every vintage in the winery. We utilise the Shiraz varietal (increasingly used in Provence Rosé), a renowned brute when produced as red wine. However, with the greatest of care and delicacy, we whole-bunch press the Shiraz to extract its elegant citrus fruit flavours and acidity found in the flesh. Then with a little more force, we extract the slightest of salmon colour and spiciness that resides in the skins. The juice is then transferred to oak barriques (a very small amount new), for a cool and slow fermentation with indigenous yeasts. The ferments are carefully monitored and aerated to provide a healthy ferment to which we do not otherwise intervene. As the ferments slow the barrels are topped full and left for careful and constantly monitored ageing in the cellar, for between 6 to 10 months. When it is determined the wines are showing a balance between freshness and creamy richness the wine is carefully blended and bottled.
