2024 Pinot Noir ‘Mt Eliza’
Tasting Notes
Complex and brooding aromas of lifted red cherries, plum, mulberry, rhubarb, sappy stalk, dusty oak, and Canadian forest pine mushroom (half of the RHINO is Canadian). On the palate bright red cherry and cranberry with mineral acidity, loads of chalky, dusty tannins linger to anise, cedar and forest floor.
Winemaking
Utilising 3 clones 115, MV6 and G5V15 from the warmer sandy soild of Mt Eliza, the fruit was 100% destemmed into small fermenters. A cool to warm ferment using indigenous yeast, regular hand plunging, followed by a long post-ferment maceration until the optimum tannin structure was achieved. Pressed into stainless tanks until the completion of malolactic decarboxylation and transferred to French Oak barriques, a small portion new, for 12 months aging. Careful selection and blending prior to bottling.
