Tasting Notes
Aromas of sweet raspberry coulis, plum, liquorice root, violet, dusty/coconuty oak with hints of leafy black currant and cherry pit. Bright raspberry and currant fill the front plate with crunchy acid, loads of fine dusty tannin, cherry pit and loads of plum and liquorice.
Winemaking
Although treated in a similar manner, this wine hailing from our sister vineyards in Colbinabbin (AKA Heathcote) is a stark contrast from those produced from grapes grown here on the Mornington Peninsula. Destemmed to open fermenters, we try our hardest to keep these ferments cool and minimise extraction. After a cool and slow ferment, the wine is pressed to a mix of new and older French oak barriques for slow aging over 18 months, prior to bottling.
